Our story

We are Mark and Paty

The duo behind Taco Velo.

I’m Paty, originally from San Cristobal de las Casas. I’ve lived across Yucatan, Baja California Sur and Central Mexico. Raised vegetarian, I reimagined my favourite tacos through that lens.

I’m Mark, British-Swiss, a neuroscientist and data scientist focused on artificial intelligence. When I’m not in the mountains or playing violin, I build the systems behind Taco Velo.

Together, we share a deep love for Mexican food and a commitment to sustainability, shaping Taco Velo as both a culinary and thoughtful experience.
